Dorado with Tamarind-Coriander Sauce

The Baguio market is seafood heaven only if you wake up early. And I mean real early -- 6-ish, the time I'm smack in the middle of my sleep. In other words, it was my Man Friday who bought this mahi-mahi dorado for me. Cafe by the Ruins' recipe below!
